Published almost simultaneously at London and New York, Pereira completed the preface to the London edition of this work on June 13 and the American editor, Charles Alfred Lee (1801-1872), wrote the American preface on July 26, 1843. Pereira had initially intended to treat this subject as fully and systematically as he had the materia medica but found the subject far too extensive. He concentrated instead on analyzing the chemical elements of food, presenting his own classification of foods, considering their nutritive qualities, and recommending diets for prisoners, children, members of the armed forces, the sick and insane, and pregnant women.
